The most special night of the summer is about to begin.

Our ‘Musical Pairing Under the Stars’ is back, a unique experience where fine dining, wine and music come together under the stars at Finca Calderón.

Enjoy a six-course dinner designed to delight, in which each dish is paired not only with a selected wine, but also with a piece of music performed live by Álvaro Ramos (cello), Álvaro Márquez (piano) and the mezzo-soprano Carmen Lázaro.

The dinner, prepared by our team at the Finca Calderón Restaurant, will consist of the following dishes:

Shared starters
· Croquette made with braised pig’s trotters.
Paired with Pasión de Bobal Blanco (blanc de noir).
· Chargrilled Valencian oyster with a marinade of roasted sweet potato and orange.
Paired with Pasión de Bobal Blanco (blanc de noir).
· Tiradito of northern bonito, pine nut ajoblanco and fennel salad.
Paired with Raíces Malvar.

Fish:
· Grilled sea bass, creamy celery sauce and glazed spring onions.
Paired with Raíces Treixadura.

Meat:
· Charcoal-grilled Iberian pork shoulder, potato mille-feuille and boletus cream.
Paired with Equilibrio Selección.

Dessert:
· Creamy rosemary and vanilla flan.
Paired with Pasión Cuvée Brut Nature or Pasión de Bobal Rosé.
