A dinner where every detail has been carefully considered, a total solar eclipse, wine and live music. On 12 August, we’ll experience one of those nights at Finca Calderón that are unlikely to be repeated.
On 12 August, the sky will treat us to a total solar eclipse, an extraordinary phenomenon that we wanted to mark with an experience to match.
We look forward to welcoming you to Finca Calderón to enjoy an evening where fine dining, wine, astronomy and live music come together in a unique setting, surrounded by vineyards.
The evening will be accompanied by a piano and cello duo, who will provide the soundtrack to one of nature’s most breathtaking spectacles.
In addition, each guest will receive a pair of approved glasses so they can enjoy the eclipse in complete safety.
This will be the menu to accompany such a special evening:
Shared starters:
· Lettuce hearts, Idiazábal Caesar salad and XXL anchovies.
Paired with Pasión Cuvée Reserva Brut Nature.
· Burrata, grilled peaches, pistachio vinaigrette and fresh herbs.
Paired with Raíces Albarín
· Glazed mackerel, broccoli cream and orange juice.
Paired with Pasión de Bobal Rosé
Fish:
· Roasted sea bass, Iberian ham jus and candied baby leeks.
Paired with Raíces Treixadura.
Meat:
· Beef sirloin tataki with a miso and noisette butter emulsion and fried garlic.
Paired with Las Pizarras Las Lomas.
Dessert:
· Chocolate in different textures
